Black-eyed Pea Salad

Happy New Year!

2 15-oz cans black-eyed peas
1/2 red onion, chopped
1 red pepper, chopped
1 green pepper, chopped
1 tomato, chopped
1 stalk celery, chopped
1 T fresh parley, chopped (or 1 t dried)
3 T balsalmic vinegar
2 T olive oil
salt and pepper to taste

Combine first 7 ingredients in a medium bowl. Separately make dressing: combine vinegar, oil, salt, and pepper in a small bowl. Toss vegetables with dressing, cover and refrigerate. Serve chilled.
