Blonde Brownies

This is my family’s favorite dessert. I swear it takes literally 5-10 minutes to prepare. I like to fix it while I am yelling at the kids to set the table, pop it in the oven when we sit down to eat, and then voila! Hot melty gooey chocolate chip heaven is ready just as we are done.

1 c packed brown sugar
1/3 c butter (I use ICBINB)
1 c flour (I use 1/2 whole wheat)
1/2 tsp baking powder
1/8 tsp baking soda
1/2 tsp salt
1 egg
1 tbsp vanilla
1/2 c chocolate chips

1) Grease an 8×8 (or 9×9) pan. Preheat oven to 350F.
2) In a small bowl or pyrex measuring cup, microwave brown sugar and butter together until butter is **just** melted (for me, this is ~30 sec). Stir to combine.
3) In a medium bowl, mix flour, baking powder, baking soda, and salt.
4) Back to the wetness. Stir in the egg and vanilla.
5) Add the wet ingredients to the dry. Gently stir/fold until mixture is uniform.
6) Spread into prepared pan. Sprinkle evenly with chocolate chips. If you are feeling frisky, use white chocolate chips. Or PB chips. Or a mixture. Or if you really want your family to love you (because food is love), also sprinkle some mini marshmallows over that puppy.
7) Bake in preheated oven for 20-25 minutes, or until edges are beginning to become that special browny-gold color and the middle is pretending to be set (but is mostly underdone and therefore delicious and the most sought-after bit).
